Recipe - Almond Cookies

I love almonds, but as I cracked a tooth in half eating them, I need to come up with a method a bit less harsh on the chompers. I tried the below and they came out ok.
Ingredients:
- 2 cups almonds
- 3/4 stick butter
- 1 egg
- 15 packets Splenda
Preheat oven to 325. Grind up almonds in a food processor. I tried a blender - too much work. Mix the ingredients by hand until you’ve got a nice gooey consistancy. Roll into balls, place on greased cookie sheet, flatten the balls to a cookie-like shape and thickness, and bake for 20 minutes. Real world testing by my 8-year old daughter elicited the following comment: “I didn’t like the almonds in it.” I promised her I would leave the almonds out the next time I made them ![]()
