I had this at a gormet restaurant in Michigan years ago and looked it up online and made it at home and it was great. I however didnt use the mayo and did use the real shredded parma cheese The shredded kind melts much better and has a better flavor however I got mine freshly grated and the only other good kind is Kraft). I put coconut oil in the bottom of a pampered chef pan melted it put the fish in put the cheese on it then liberally put pieces of butter on it and then pistachios. Bake at 350 for maybe 15 minutes (u can try it and see if it is done) and thats it. Everyone loves it but I will ad the mayo next time. I also just got the mayo with olive oil in it and it is great :) Anyay the whole things take maybe 3 minutes to do and I dont have to mix it ahead of time. I thikn the recipe is called encrusted white fish and u can use any kind of fish :) U could also sprinkle some home ground almond flour on it. The almond flour from the store is too expensive and is also too fine.
