Kitchen Experiment # 19 - London Broil in Marinade

I am sure that most of you have eaten London broil, so this ‘experiment’ is most likely a big ‘duh!’ for most of you, but for me, London broil was a ‘once-in-a-blue-moon’ meal as a kid - and pretty much I haven’t eaten it since.
Over the weekend, I stopped on the way home from work [...]

Chocolate Bark with Coconut Oil

Chocolate is supposed to be good for you - if you can avoid the high sugar found in most chocolate. For years, I’ve gnoshed on the Lindt 85% dark chocolate, and though I never was a big dark chocolate fan, this is really good dark chocolate and I always buy it.
If you just can’t stand [...]

Kitchen Experiment #18 - Demented Mock Potato Salad

The conscripted members of the Low Carb Confidential Taste Panel (my wife and two daughters) cast a wary eye at some of the things I prepare. Long experience has told them that to accept my innocent-sounding invitation to ‘take a taste’ puts them in a bind, as what was offered might indeed be yummy - [...]

Kitchen Experiment #15 - Pickled Eggs

This was over 3 months in the making. I stumbled across the notion of making an old fashioned pickled egg - I had heard that these ued to be a staple in bars in the early part of the last century, which somehow conjured up romantic images of simpler times.
It’s got to be good.
THE EXPERIMENT: [...]

Food Griday

Let’s (actually, let me) talk about food for a few minutes.  What I’ll be saying is, of course, my own opinion, and not to be taken as a call for anybody to change what they’re doing or how they feel about it.  It’s just something to think about.
I’ve read with interest many low carb recipes, [...]

Kitchen Experiment #16 - Pork Krispies in Cream

You know - after some spirited discourse on the metabolic processes in regards to fat and alcohol - along with sundry interwoven threads regarding social alienation, Maslow’s hierarchy of needs,  smoking cessation, and the political and ideologocal struggle against trans fat - I’m ready to kick back and have me a big ‘ol bowl of [...]

Scrambled Eggs with Grilled Chicken and Cheese

I did not hold out high hopes for this one - I thought it would be edible, maybe, but I was impressed as to how well the flavors went together.
Plus, it was so simple.
I have been playing with a bag of Foster’s Grilled Chicken strips - they are already cooked and frozen - just take [...]

Burger Italiano

Mrs. Megamas is rarely stuck for an idea when it comes to doing something different and impromptu with ingredients at hand.  Take the other night for instance: that morning, we’d taken out a pound of frozen hamburger to thaw for dinner but had no idea what to do with it.  During the workday, Mrs. M. fiddled [...]

Kitchen Experiment #13 - Ham & Cheese Biscuits

As mentioned in previous posts, I’ve been exploring George Stella’s cookbooks and had played around with his ham and cheddar morning muffins - except that I used SPAM instead of ham because of a poor cellphone connection (should have used Sprint).
Anyway, I had enjoyed that experiment, so I thought I’d come up with my own [...]

Cheesy ‘Cream’ Spinach with Ham

This experiment came out quite good so here it is:

1 20 oz. bag frozen chopped spinach
3/4 lb. deli ham - I used the store-cooked type that has a milder flavor and is less processed.
1 stick butter
5 slices American cheese
1/3 cup sharp cheddar cheese
1/3 cup almond ‘flour’ (almonds I ground up in the food processor)

Chop the [...]
